Swetsville Zoo
There is an old farm in Fort Collins. An old welder has made many creations out of things of all kinds. It is a free attraction and my kids loved it. I can't believe that we never went sooner :) These pictures are just a small sample. The number of creations is unbelievable.
Sharing a bed
Maisy moved into Gracie's bed one night and hasn't left since. She sleeps better when someone is there to keep her company. I found them snuggled so sweetly one night. Love my kids.
Pancake Squares
I always think about posting about some of our favorite food. We found the idea for pancake squares on Pinterest. They have become a regular staple and a huge hit around here. We have added blueberries, left them plain, and turned them green.
Why I like them...
-same consistency as cake but same ingredients as pancakes. Fun texture change.
-My kids gobble the leftovers and nothing is ever wasted.
- No cutting them up for your kids because they are so soft.
- I feel like we use less syrup than with regular pancakes
-My kids would eat pancakes daily if I let them, and I am still recovering from freshman year of college when we ate way too many pancakes for dinner. Change of pace.
- Oh, and my favorite of all... I stick them in the oven for 20 minutes, clean up messes in my kitchen, and then eat WITH my family.
Pancake Squares
3/4 cup milk
2 T. melted butter
1 large egg
1 T. sugar
1 cup flour
2 t. baking powder
1/4 t. salt
Preheat oven to 350°. Lightly grease an 8×8 baking dish. In a large mixing bowl, beat together milk, butter and egg. Add sugar, then gradually beat the flour in. Carefully stir in the baking powder and salt. Pour batter into prepared pan. Bake for 20-25 minutes. Serves 4-6.
** I double the recipe and use a 9x13 pan.
